Executive Chef Harry Yakinthou has collaborated with some of the most well-known chefs in the world and designed international gastronomic dinners for restaurants around the world that have been awarded Michelin stars. Some of these restaurants include Le Normandie at the Mandarin Oriental in Bangkok and Caprice at the Four Seasons Hotel in Hong Kong. He has cooked for a number of the world’s royal families, including the Queen of England, the Duke and Duchess of Cambridge William and Kate, and a number of celebrities, and he has worked as a chef consultant alongside Michel Roux and Gary Rhodes in the design of the first-class menu for British Airways.

They were brought up in a Mediterranean Cypriot family in Perth’s northern suburbs, where they were surrounded by the love of good food, among herbs grown in and picked from their parents’ garden, and enormous family gatherings. His brother Philip, who is the restaurant’s General Manager, also played an important role in their upbringing.

These formative experiences contributed to Harry’s determination to pursue a career in the culinary arts. Because of his enthusiasm and love for food, he began his culinary education at Mundaring’s renowned Loose Box, where he studied under the Meilleur Ouvrier de France and twice-knighted Alain Fabrègues. His training helped him become a Michelin-starred chef. Harry learned under Alain’s tutelage the discipline and art of cooking, as well as respect for the garden-to-table story of each meal. This respect was built during Harry’s time spent working under Alain.

After working at The Loose Box, Harry moved on to one of the most prestigious restaurants in England, Michel Roux’s Waterside Inn. This restaurant is the only one outside of France to have maintained three Michelin stars for thirty years in a row, and it has served as a stepping stone for renowned chefs such as Gordon Ramsay, Marco Pierre White, Heston Blumenthal, and Marcus Wareing, amongst many others. Harry worked at The Waterside Inn for a total of seven years, during which time he rose through the ranks from first commis chef to senior sous chef and then chef consultant for Michel Roux Sr.

In the end, the love of sharing meals, the care for cuisine, the importance of the freshest produce, and the time to slow down and laugh and eat something wonderful with the people you love brought Harry back home to Perth, and it led them to re-open Paul Conti’s beautiful historic home for you.
